Hugo Gouveia: Head Chef
Most recently, Hugo worked as Head Chef at Michael Caines Cafe Bar & Grill in the Royal Clarence Hotel, Exeter. In addition to producing outstanding cuisine, he was responsible for menu planning and the training of Junior Chefs. He chose this position as an alternative to the renowned Gidleigh Park due to the more senior position on offer and the opportunity to develop his own menus. Hugo has prevuisly worked alonside Michelin Star chef Michael Caines at the Royal Clarence, and the 5 star Hotel Endsleigh, awarded three AA Rosettes for culinary excellence. Hugo has won various awards over the years, including the Southern Regional UK Seafood Championship, a Medal of Honour & Excellency from City & Guilds, and the Savoy Trust Award. His plans for Lydford Country House include the creation of new Tasting, A la Carte, Fine Dining and Bistro menus. |
